Hi guys,
I thought I'd contribute... so here it goes.
Chicken (Cutlets) And Waffles (serves 2)
WHAT YOU NEED:
o [4] thinly sliced chicken cutlets or [2] thick sliced chicken cutlets. (trim off excess fat) o ( * ) Pancake Mix (from the box... follow recipe instructions on box) o Waffle Iron o Frying pan o Oil for frying chicken of your choice) o Pancake syrup o Seasoning of your choice for chicken (salt & pepper for me) o Bread crumbs o 1 egg for dipping chicken (additonal eggs needed for pancake mix) o Butter or margarine o Paper towels
( * ) = frozen waffles or Thomas' Waffles found in the bread aisle
DIRECTIONS
o Pour in cooking oil into frying pan, just enought to slightly cover chicken cutlets and preheat. o Dip your chicken in the egg and cover with bread crumbs o Fry chicken cutlets on medium flame. o Prepare pancake mix for waffles and pour into waffle iron. One "Belgium" waffle for should suffice, for this meal, for each diner. o In the event you are using frozen waffles, you may want to use more than one waffle for each diner. o Please be mindful to fry chicken cutlets on both sides until evenly brown. o Remove chicken from frying pan and place on serving dish with paper towel. o Remove waffles from waffle iron. o Place chicken and waffles on dinner plate. o Butter your waffles (optional) and cover BOTH chicken and waffles in pancake syrup.

UM UM UM. NOW THAT'S SOME GOOD EATING. I'VE BEEN TRYING TO GET BACK TO CALIFORNIA JUST TO GO TO ROSCOE'S. MAYBE I'LL DO THE NEXT BEST THING AND TRY YOUR RECIPE.

Thanx Curet...but I don't have a waffle iron. Will simple pancakes do? ;D Whenever I get a taste for chicken and waffles, I usually go to Gladys Knight and Ron Winans here in ATL. As a matter of fact, I passed there today and my mouth was watering. I wanted to go in soooo bad! I was alone and it was lunchtime and I wasn't up for a long wait just to eat alone. I'll probably go back Sat...now that my mouth is watering. ;D

NO FANCY, PANCAKES ABSOLUTLEY WON'T DO. IT HAS TO BE WAFFLES. I SURE WISH I LIVED NEAR A ROSCOE'S.
