You can buy a package of oxtails (they are beef) or two in the section where you get beef stew meat from. OKAY.
1 box frozen cut okra (you can use fresh if you feel like it)
1 package of frozen corm (you can use fresh if you feel like it).
1 cup of carrots - fresh or frozen
cut in quarters 3-4 medium white potatoes
1 medium chopped or sliced bell pepper
1 medium chopped or sliced onion
2-3 stalks cut up/cubed celery
seasoned salt and pepper to taste
1/2 tsp of sugar
1/2 tsp of garlic powder
*can of diced tomatoes or can of tomatoe sauce, or you can use a cup of fresh tomatoes, cut up.
You boil the oxtails until they are tender ( I would say at least a couple of hours unless you got a pressure cooker,of course then they would tenderize much faster). Leaving the oxtails and stock in the pot.
In a pan take a pat of margarine or butter, pam whatever you use and heat the pan. Turn the fire down low so as not to scorch or burn.
Saute onion, okra, bell pepper, celery, carrots, corn, potatoes, tomatoes (if you use the tomatoes), until you can see through the onions
After sauteeing all your veggies, pour them into the pot with the oxtails. Add seasoned salt, black pepper & sugar to your taste...
Turn the flame down low on your pot now with the oxtails and veggies. Put a bay leaf on top and let simmer for about 45 minutes to an hour. Serve over rice and make a pan of cornbread. It's excellent STICK TO YOUR RIBS FOOD AND IT IS A HEALTHY DISH! Peace...
