Here is a recipe I 'found' on TJMS...for those of you who tangle with those ribs. You probably got your own, but this sounds pretty good.
I of course start out with ribs. Pork ribs, not those fox ribs (baby back or St Louis).I trim all the fat possible. If you don’t, you’ll fight fire the whole way. I also trim that silver skin (film) off the back.I then rub those babies with a homemade (and secret rub). If you don’t have the secret rub you can use a homemade version Larwys (listed below) and add thyme. My mix has a few special things in it I can’t share.
2 tablespoons salt
2 teaspoons sugar
1/2-teaspoon paprika
1/4-teaspoon turmeric
1/4-teaspoon onion powder
1/4-teaspoon garlic powder
1/4-teaspoon cornstarch
I rub this liberally on my ribs. To add more flavor, I make a wet rub that is worcstershire sauce and liquid smoke. The only worcerstershire sauce that is acceptable for this application is Lea & Perrins. The only acceptable liquid smoke is Wrights. Nothing else will do. Don’t have these brands in your area and you’re Phlucked.Rub this on the ribs over the rub and let sit overnight. Drain the juices that come from the ribs in a saucepan. Add beer, rib rub mixture, liquid smoke combo and vinegar and bring to a boil. Don’t breathe the vapors.This is your mop. You have to use a warm beer. It doesn’t matter if it’s skunk beer.Fire up the grill (charcoal). Kingsford only and mix in some hickory chunks. I don’t know if you have a Menards in your area. They have a giant bag of wood chunks.You can grill one of two ways. The fast way with the grill top up or the top down that can take several hours. Either way is good. You aren’t finished until the mop is gone. This means baste those ribs often.These ribs stand by themselves without sauce. But… well I won’t tell you my sauce recipes. On recipe I have is an Indy favorite. Zeb’s Mambo Sauce. I cloned this sauce years ago. Only someone who is old school from nap can tell it’s not totally Zebs. But…I of course omitted a lot of secrets. I have my rib honor to maintain. But using the above will create dayum good ribs. Just ask anyone here who has had my ribs and will admit to knowing me.
